Born & raised in Paris, France Johann moved to United States to purse the American Dream. He did just that through the art of bread making. In 2013 he landed in Miami, FL where he found a job working at a chic French Bistro. Missing the smell and taste of French Bread from home, Johann found comfort in the bread from the French bistro and this is where his journey in bread making began. He went on to train under a French Baker, Florian Barbier in his wholesale business providing bread for restaurants and bakeries around the city. Johann fell in love with the precision and intensity of the process. He stayed dedicated to the craft & technique for the next 6 years. In 2020 Johann embarked on his own path to entrepreneurship and opened a food trailer at a boutique hotel, The New Yorker in Miami where he served bread & breakfast. The local community quickly lined up every morning for their French baguette and coffee. Support for Johann’s craft continued to grow.
In 2022, Johann moved to Chattanooga with his wife and children and a dream of opening his own French Boulangerie sharing his passion for authentic French Bread! In the past 3 years Johann has gained a cult following and a supportive community yearning for a true Parisian experience. Chattanooga has become a special pillar in Johann’s journey not just through the art of bread making but also citizenship. In May 2024 Johann accomplished what he started in 2013 and became an American citizen sworn in at the Walker Theatre downtown. This is a monumental moment that has made Chattanooga a cornerstone in bringing Oui Oui Boulangerie here. When we say Oui Oui is authentically French it’s not just because of Johann’s Parisian roots, he sources his ingredients from France, offering a truly French product. In Spring 2025 Johann began baking from the Kitchen Incubator of Chattanooga and launched his Bread Club where loyal customers pick up their French Baguettes & Croissants every Sunday morning. Johann plans to open a brick and mortar in the Southside in the near future.
