What ingredients do you use?
Our products are made from simple high quality ingredients from France. We use flour, butter, salt, & chocolate.
What flour do you use?
We use BAGATELLE Flour from France that we import here to Chattanooga. BAGATELLE is the only traditional French baguette flour with the Label Rouge certification. Made with sourdough, its full flavours are revealed through its perfectly baked thin crust while its fibre and carbohydrate content make it the perfect ally for a balanced diet. We use this flour for both our baguettes and croissants.
what is the label rouge?
The flour we use holds a Label Rouge. The Label rouge seal is a French label that applies to products that have been produced or prepared in a way that ensures a superior quality over other similar products. The flour we use hold this label qualifying our product as a “Traditional French Baguette.”
What butter do you use ?
We use Isigny Butter imported from France to Chattanooga. Isigny Butter holds the prestigious AOC Label for it’s excellent terrain and high levels of beta-carotene, iodine, oleic acid and diacetyl, which give the butter its unique flavour. All characteristics specific to its region.
Where do you bake?
While we work on our future brick & mortar location in the Southside, Johann bakes from the Kitchen Incubator of Chattanooga.
